Ballyoak Cheese
Ballyoak is a
soft cheese which is made from cow’s pasteurised milk, made into cheese in
small traditional cheese vats, mould ripened then placed in a kiln where
smoke from oak chips is drawn very slowly over the individual cheeses
imparting a unique flavour and texture to each one.
